I spent a year building relationships with Nigerian men and women who staying in a hostel while seeking asylum in Ireland. I was given permission by staff to prepare a Nigerian meal, egusi soup, with the women in the hostel. They were all excited to get to cook since they are not usually allowed to cook in the hostel. The food was a catalyst for deeper conversations to occur.
